1+1+1= Goat Cheese & Ricotta Crostini

Olive Oil =








Goat Cheese & Ricotta Crostini

20-24 thinly sliced french bread
3-4 ounces soft goat cheese (leave cheese out so it softens)
1/3 cup ricotta cheese- whole milk
2 tablespoons olive oil
1/2 cup of pine nuts
1 tablespoon finely chopped fresh basil leaves
1 teaspoon grated lemon peel
Salt & pepper

Heat oven to 400 degrees. Drizzle or brush 2 tablespoons of olive oil on the slices of bread. Sprinkle pine nuts on each slice. Grill the bread until golden brown (about 3-4 minutes, but keep an eye on it).

In a small bowl, stir the goat cheese, ricotta, basil, lemon, and remaining 1 tablespoon of oil until creamy. Sprinkle with salt and pepper. Spread the mixture on the bread slices and mangia!
